Mexican Manicotti

Ingredients:
1 lb ground beef
1 can (16 oz) refried beans
2-1/2 tsp chili powder
1-1/2 tsp dried oregano
1 package (8 oz) manicotti shells
1 can (19 oz) enchilada sauce
2 cups sour cream
1 cup (4 oz) shredded Monterey Jack or Mexican style cheese
Diced tomatoes, optional
Sliced green onions, optional
Sliced ripe olives, optional

Directions:
Cook ground beef. Boil manicotti shells. In a bowl, combine cooked beef, refried beans, chili powder and oregano. Spoon into cooked manicotti shells; cover the bottom of 13x9 inch baking dish with enchilada sauce and arrange stuffed shells in dish. Pour enchilada sauce over top. Cover and bake at 350˚ for 30 minutes. Uncover; spoon sour cream over the top. Sprinkle with cheese, onions, olives, tomatoes (or whatever you like on top). Bake 5-10 minutes longer or until the cheese is melted. Can also serve with guacamole to go on top. Yield: 8 Servings
